Key points at a glance
- Regulation (EC) No 852/2004 on the hygiene of foodstuffs also applies in a food truck.
- Requirements include a dedicated hand-wash basin with hot and cold water and separate tanks for fresh water and waste water.
- Thin, folded stainless steel sheets save weight. All fittings are firmly fixed to the vehicle.
- Clarify major conversions with a vehicle inspection body beforehand.
Concept first, then the fit-out
What will you sell, how many portions per hour, who works in the truck? Equipment, refrigeration and work surface depend on this. In a tight space every centimetre counts, so the fit-out is planned around the workflow.
Weight also matters: every kilo of fit-out comes off the payload.
What food hygiene requires
| Area | Requirement |
|---|---|
| Hand wash basins | separate basin with hot and cold water, soap and disposable towels |
| Surfaces | smooth, washable and easy to disinfect; stainless steel is ideal here |
| Water | sufficient drinking water, fresh water tank made of suitable material |
| Waste water | separate waste water tank, kept apart from fresh water, emptied properly |
| Refrigeration | enough cold storage to maintain the cold chain even on long days |
The basis is EU Regulation (EC) No 852/2004, which also covers mobile premises. The vehicle must be registered with the food safety authority; the responsible office will clarify the details.
What matters in the installation
Weight
Thinner sheets with folded edges are light yet stable. That leaves payload for stock, water and staff.
Fixing
All furniture and equipment is fixed securely to the vehicle. Nothing may come loose when braking, including drawers and doors.
Gas and power
Gas systems in vehicles must be inspected regularly by qualified experts. Power requires a safe supply connection and suitable circuit protection.
How a fit-out works
Major conversions may require an inspection or an entry in the vehicle documents. Clarify this with a testing centre before the fit-out.
Questions about food truck fit-outs
Do I need a separate hand basin in a food truck?
Yes. Hand washing requires a separate basin with hot and cold water, kept apart from the sink for dishes and food.
Why stainless steel in a food truck?
Stainless steel is robust, hygienic and withstands vibration and temperature changes. With thin, folded sheets the fit-out still stays light.
Does the conversion need to be registered?
That depends on the scope. For major conversions, it is best to check with a testing centre beforehand whether an inspection is needed.
Do you fit out food trucks?
